Cherry Pie Squares..

Ingredients
2 1/2 cups flour
1 cup shortening
1/4 cup sugar
1 tsp salt
1 egg
2/3 cup milk
2 cans (21oz each) Cherry Pie filling
Glaze pinch of salt 1/2 tsp almond extract Powdered sugar 2 Tbsp melted butter 2 Tbsp milk
Instructions Preheat oven to 375 degrees. Line a bar pan with parchment paper. Mix flour, sugar, and salt. Cut in shortening with a pastry blender until it resembles coarse crumbs. Add egg and milk. Mix well to form a dough. Divide in to 2 balls. Roll one ball on a floured surface to the size of the bar pan. Lay in pan as bottom crust. Spread Cherry Pie filling over bottom crust. Roll out second ball of dough just like the first and lay on top of pie filling. Bake for 35-40 minutes until golden brown on top and edges. Make glaze using just enough powdered sugar to make a thin, spreadable glaze. Put on while still warm. Let cool 5 minutes and cut in to squares. Store in air tight container in refrigerator. Enjoy!!

Pavlova with Strawberries.  (Eleni Tsilikidou) 
4 egg whites
1/4 teaspoon cream of tartar
1 cup sugar
1/4 cup cornstarch
2 vanilla

For the cream
1 cup whip  cream
1/4 cup powdered sugar
2 vanillas
Strawberries

1.Beat egg whites  with cream of tartar in mixer at high speed ,untill teh become fluffy
2.Mix the sugar with the cornflour and vanilla , continue beating and pour the mixture little by little . Keep beating for 5-7 more miutes on high speed until the sugar is completely dissolved and forms a meringue standing .
3. Draw a circle with a diameter of 22 cm onto a wax paper and place the oven rack in the oven .
4. Empty and even out  the meringue inside the circle or form a skirt ballerina «tutu» with a piping bag.
5. Bake the Meringue  for 30 minutes at 120 ° C. Lower the temperature to 90 ° C and bake the meringue for another 15-20 ' . Turn off the oven and leave the meringue to cool in it . ( DO NOT OPEN THE DOOR ! )
6. Beat the cream with the vanilla and icing in whipped cream . Fill the meringue with soft whipped cream and place fruit just before serving .
